Hey it's friday

Friday nights are home date nights in our house.
We both have very hectic weeks so we make sure that on Friday evenings we do something different form a usual week night.

Usually we cook together & then catch up on a film or something on TV is a good wind down for the weekend.

Tonight is Pizza & beer night but it home made Pizza & a locally brewed beer so it's a bit more special than it sounds.

Recipe

(this will be enough for 2 medium pizzas)
for the base
200g  strong white flour
100g   plain white flour
1 tsp salt
large splash olive oil
1 tsp dried yeast

Put flour yeast & salt into a large bowl. Make a well, pour in about 200ml warm water
and olive oil. Bring this all together with a wooden spoon until you have a soft, fairly wet dough.
Turn out onto a floured surface & knead until smooth (usually about 5 Min's) Cover with a tea towel and set aside.

for the topping
1 tin chopped tomatoes

Be brave for this bit - tip the tin of tomatoes into a nonstick pan and place over a medium to high heat shake but do not stir. Leave on heat until all the moisture has evaporated & the colour has changed to a darker red.this should be a paste like consistency.

Pre heat your oven to 240C/Fan 220C/Gas 8.

Next roll out your dough to form two rounds on a floured surface. We usually make our pizzas about 25cm across. Lift & place on floured baking sheets. Divide the tomato paste between the two bases and spread with the back of the spoon.

olives (black,stoned & ripped)
2 balls mozzarella (drained & dried)
cherry tomatoes
 basil leaves
Scatter over the remaining toppings, ripping not slicing the mozzarella balls, add seasoning if you wish. Bake for 8-10 Min's then slide off the baking tray back into the oven for a further 2 Min's to crisp up the base. Serve with a mixture of pesto & olive oil drizzle on top.

Etsy time

The best thing about Etsy is it's ever changing display.
I really enjoy visiting each day just to see whats new & what catches my eye.

I love the look of these beach towels perfect for relaxing on the sand & colourful for the summer sunshine. I'm dreaming already.

Sakura Bath & Body
If I could only have one item in my makeup bag it would be lip balm and I'm always trying new flavours. I was drawn into this site by the bright colours & simple packaging. I have earmarked a number of ones to try so I will let you know how I get on with them on a later post.

Suds N Sparkles

And finally these simple soaps with a complex mixture of essential oils I just have to smell. It's scent is a blend of  patchouli, vanilla, rose absolute, orange and jasmine.

When life gives you lemons..............

Somewhere in the world there must be a glut of lemons. Our local store is selling them at a discount and never one to miss a bargin I lugged home a whole bag full. So to help banish New Year coughs & colds and to have a non alcholic alternative with our evening meal I decided to make up some fresh lemonade.

It's a very easy & quick recipe

Ingredients

3 Lemons (preferably unwaxed) roughly chopped
140g caster sugar (more if you've a sweet tooth)
1 litre water

tip the lemons, sugar and half the water into a blender or food processor & wizz until the lemons are finely chopped.
pour the mixture into a sieve over a bowl and, using a wooden spoon, press a much juice through as you can. This will give you a lovely homemade cloudy look - if you prefer it to be clearer give the juice a second strain through a muslin bag.

top up with the remaining water and serve over ice with a slice of lemon and some fresh mint leaves.

you can also top up with sparkling water to give a lovely fizzy drink instead.

Let us begin...............

I've set up my work space, made up my blog name and designed my page now I should post something.............

Like many before me I thought long & hard about my opening post. Should I be witty light & funny? should I set out my aims, goals and ideas? make myself sound more interesting, exotic & mysterious, what should I do...............?
I sit here for a moment page blank fingers poised over the keys, ready for inspiration to strike. Never one to be lost for word I seem to have been suddenly struck dumb, writers block so soon in my fledgling blogging career and surely all first blog post are about their 'first blog post' !!!!!!! Stop it.... what am I doing.... this won't attract anyone...... we've all read this before.
Right a beginning that's what I need. I get out my camera, grab some scrabble letters, throw them down ......and here it is...............
