Pistachio and Cranberry Biscotti



I'm feeling very proud of myself! Yesterday I finished writing all my Christmas cards and not only have I achieved that, I have also stamped and posted them....... all of them.......there isn't a small pile waiting for the correct address to be confirmed....... there isn't one to Andrew's Uncle John waiting for him to confirm his surname to me (I have been told it every year for 18 years! for god's sake Elizabeth! remember the darn name!) You see last year I had an organised 20 minutes and update my address book - so this year I would be 'good to go' -when the Christmas-card-writing-time came.......

So to celebrate I made biscotti - not my usual plain lemon ones - but colourful and yummy pistachio and cranberry ones. I like to have batches of special looking biscuits, made up this time of year, so I have something extra nice to offer visitors with their coffee and also they can make lovely gifts for those unexpected Christmas guests - the elusive Uncle John for example!

These are one of my favourite recipes - so easy and you can add different nuts, spice and fruit to the same basic recipe......

Ingredients
(makes about 45 small biscuits)

60g butter
250g caster sugar
zest & juice 1 lemon
2 eggs
400g plain flour
1.5 teaspoons baking powder
75g pistachio nuts - given an irregular chop
75g dried cranberries

Pre-heat oven to 180C/gas 4


Begin by measuring out your sugar and butter. Place together in a bowl and beat, with a wooden spoon, until all the butter and sugar have combines and your left with a 'breadcrumb' consistency. I have tried making these with a mixer but the finished biscuit was too smooth, the texture wasn't pleasing - to me - at all so I always make mine by hand.....

next add your lemon zest ....


followed by the two eggs - crack them straight in and then beat it all together .....


you should now have a thin 'wallpaper paste' consistency.....


sift all your flour (and baking powder) straight in....


and gently combine into your paste....


add the juice of your lemon....


and then your pistachios and cranberries. Combine it all together to make your biscuit dough....


Turn out onto your work surface and form into a large fat sausage. Cut into 2 and roll each half into a long sausage that will fit the length of your baking tray - the thickness of your sausage will determine the size of your biscuits so if you want small biscuits divide the mixture into smaller sausages....


Place into the oven for about 20-25 minutes - until they start to colour and dry a bit....


Lift each sausage off the baking tray and onto a large chopping board. You now need to cut them into slice to form your biscotti.


Place them back in the oven for about 10 minutes until they have browned to a golden colour and have dried out...


When they have cooled lift on to a rack to cool completely and then store in an airtight container...
