Courgette Noodles



Hmm how to explain this post?

Well, a person might not appear over weight or visibly different but might feel a little bit pudgy, his or her jeans might feel a tad more snug, maybe they have decided that perhaps a cake or a brownie each day, as a treat, for all their hard work might be making him or her just a little past there ideal weight!

What does it mean......

To a thin person they probably seem a little plump but to a heavy person they could appear skinny.....

It just depends who they stand near........ it's all relative!

Perhaps that person saw a glimpse of themselves, side on, in the bathroom mirror and realised that perhaps that second helping was probably one step to far......

Golly, all this third person stuff is making me exhausted.........I'll come clean ........yes I'm going to cut down on the cakes and pastries and try to eat a bit more healthier for a few weeks ... although we are heading towards Christmas so lets see how I go......

This is not a diet plan is just a 'lets eat healthy plan' and I'm going to stick to it from Mondays through to Thursday but Friday & the weekend anything goes......

So to kick it off I had a go at making courgette noodle. Basically you cut your courgette into noodle size strips and they form the base of your dish.


I bought myself a julienne peeler to make the noodles, but you could use a knife, it wasn't very expensive and worked really well - although it's very sharp so watch your fingers or invest in some plasters!


all you have to do is run the peeler down the length of the courgette and you get all these lovely noodle shaped strips..


One large courgette gave me a bowl of noodles enough for one person. So I made up a warm salad for my evening meal......here it is..



Recipe for my warm courgette noodle salad....

1 courgette
a handful of cherry tomatoes
a quarter of a block feta
1 small ripe avocado
a large handful of green salad leaves (i used spinach, watercress and rocket)
salt & pepper

Dressing - olive oil, hot sweet chilli sauce, juice of one lime


after you have cut your courgette noodlesyou need to prepare your salad. Cut every thing into largish bite size chunks and pop into a mixing bowl....


set aside whilst you make the dressing ( if your going to be a while rub your avocado with a little of the lime juice to stop it browning)


to make your dressing put the lime juice, a good squirt of chilli sauce (about a teaspoon) and some olive oil (about 2 tablespoons) into a jar & give it a good shake.

Now cook your noodles.....


Bring a pan of water to the boil......................... (here's a boiling pan of water!!!)


then add your noodle and cook for just a few minutes - you want al dente not soggy....


once cooked drain and add to your bowl of salad.....


Add your dressing....


and your salt & pepper....


mix all together, gently, and serve...


This was really tasty & filling. Just like eating a bowl of noodles or pasta. I will definitely be making them again with all sorts of different sauces - although the big test will be whether I can persuade Andrew that they are a carbohydrate substitute and not in addition!
