Pineapples


I always get seduced into buying a pineapple when they appear in the supermarket and then they sit on the side watching me and wondering if I AM EVER going to eat them....

I can even remember one Christmas I bought some and ended up putting them in the top of my stepsons stockings on Christmas Eve just to pass on the responsibility of bothering with the darn things.... (incidentally - they loved them, laughed out load when they saw them sticking out above the presents and spent ages cutting them into chunks and dipping them into melted chocolate to eat!)

I just find that, unless I have a specific recipe in mind,  I just can't be bothered to go through all the faff and fiddle of preparing them - which is a pity because fresh pineapple is fantastic.....

So this week once again I have ended up with a pineapple in my shopping basket and as usual it has sat on the sideboard looking at me since I got it home!

So last evening I grabbed it, got my camera and started snapping some shots and then turned it into pudding........



I have called this recipe Caribbean Baked Pineapple

Here's the recipe

1 fresh pineapple
2 tablespoons dark soft brown sugar
2 teaspoons cinnamon
1 teaspoon ground cloves
and if your feeling the need a dash of dark rum!

Pre-heat your oven 180C/gas 4


First off peel, core and slice your pineapple.....


In a bowl add your sugar and spices - mix together.....


Then add your pineapple and your rum and toss the pineapple around until it is all evenly coated...


Lay your chunks out on your baking tray  and pop in the oven for about 20 minutes...


The sugar coating will turn syrupy and the edges of the pineapple should just be starting to brown....

Lift them out and place on a warm plate...


Serve on ice-cream or with whipped cream or clotted cream and maybe even a glass of rum on the side.........

               or all of the above if your wish......

They also taste great served in/on/with pancakes.......

                                                  ................with cream of course!!!
