Chicken & Avocado Burger


I love burgers and usually they have to be a good full on real chunky homemade beef burger but occasionally I have a taste for something a bit different & a bit lighter....maybe even a bit healthier....

Last week I was 'home alone' and had a hankering for avocado but, as it was my main meal of the day, I needed to make it a bit more substantial - otherwise I would be up in the night raiding the cookie jar...

I had some chicken leftover from the Sunday roast so a combination of the two seemed to be the way to go.....and so the chicken & avocado burger 'a la Lizzie' was formed.....

Here's what I did....

Recipe

4oz cooked chicken - shredded & cuts into cubes
1 Avocado - peeled & cubed
1 small red onion - peeled & cubes
2 oz breadcrumbs
Chilli flakes
Salt & pepper


Grab a decent sized mixing bowl and add your chopped chicken - make sure the chunks a fairly even in size & no too big.....


Next add your avocado...


Then add about two thirds of your breadcrumbs....


Followed by your red onion, pinch of chilli flakes, salt & freshly ground black pepper...


Now get your hands in and mix it all together. The avocado should provide all the moisture needed for it to combine but if it's too dry you could add some egg yolk or a little mayonnaise...


Form the mixture into patties - I made two large ones but you form what ever size you want....


Lightly dust the patties in the remaining breadcrumbs and set aside....


In a non-stick frying pan or cast iron skillet, melt a knob of butter in a slick of olive oil...


When it starts to bubble add your burgers and cook for about 4-5 minutes per side.....

And here they are finished - I served them with a green salad & some salsa ..


You could have them between a sesame bap or a bagel with a round of goats cheese or you can keep it healthy and stick with a salad
