Cauliflower Cheese



Cauliflower cheese a big production thing in our house. It's never just a cauliflower and a cheese sauce but has loads of 'extra bits added and if it's going to be a stand alone supper dish we often add a load of bacon - really yummy!

Last night I made this dish to go with some freshly boiled gammon and took my time to take a load of pictures.....

Here's my recipe.........

1 large cauliflower - divided into florets
a selection of other vegetables - I used spring onions, mixed baby bell peppers, celery, 
                                                    green chilli and cherry tomatoes - you can also add mushrooms, 
                                                    garlic, butternut squash  - or anything else that takes your fancy!
1 pint cheese sauce (see below)
Extra mature cheese for topping

Pre-heat oven to 200C/Gas7



Place your cauliflower florets into boiling water and cook until al dente (i.e.cooked to a firm bite)


Once cooked drain your cauliflower


Place into an 'oven to tableware' dish


and sprinkle over your additional vegetables of choice..

Now make your cheese sauce

  • You will need
  • 1oz butter 
  • 1oz plain flour
  • 1 teaspoon english mustard powder
  • 1 pint milk
  • salt & pepper
  • 3oz mature cheddar cheese grated

  • Melt the butter in a saucepan and stir in your flour & mustard powder - cook for 1-2 minutes.
  • Take the pan off the heat and gradually stir in the milk to get a smooth sauce. Return to the heat and, stirring all the time, bring to the boil.
  • Simmer gently for 8-10 minutes and season with salt and white pepper.
  • Stir in cheese and allow to melt. Don't re-boil the sauce or it will become stringy.

Pour over your cheese sauce


Sprinkle cheese on top.....


Pop in the oven and bake for about 20 minutes until bubbling and the top has browned.

If you want to 'tart' this dish up even more try adding a breadcrumb topping - made up of fresh breadcrumbs; grated cheese; fresh thyme; some lemon zest and some chopped toasted nuts such as walnuts or flaked almonds.....
