A Salmon Sandwich.....


Ok so my Mum has asked me 'to do' some sandwich filling idea on my blog so who am I to argue.....especially with a request from my Mum! 

So here's one I made last week for Andrews lunch - once again he's on a health kick so this one is full of yummy goodness.......

You will need to either prep a day a head for this one or make it after having salmon fillets the night before (pop an one extra in to cook) - it's worth it though it really tasted good.

You will need

Half a cucumber
1 tablespoon mayonnaise
Zest of half a lemon
rocket leaves
cherry tomatoes
Horseradish sauce
salt & pepper
Bread - buttered



First grab your cucumber and grate......


Pop it in a strainer and leave it over a bowl to remove the juices.....


Lots will come out......


Whilst the cucumber is draining, get your salmon fillet & flake into large chunks......


Give the cucumber a good squeeze to remove any remaining juices (if you so desire you can use the juice as a facial toner! check out 'Crunchy Betty' for ideas)


Put the cucumber into a clean bowl and add the mayonnaise; salt; freshly ground pepper & the lemon zest - mix it all together......


Spread your cucumber mix on one slice of your buttered bread......


Add some rocket leaves.......


Place on your salmon.......

                                                                                                   Keep Up!.........


Add some sliced tomatoes........ as many or as few as you want.......


Now spread some horseradish sauce onto you other slice of buttered bread......


and place on top.......


Cut in half and eat...............
