Blackberry Galettes


We have been rather remiss this year with our gardening choosing to spend our time in the garden eating, reading and generally sunning ourselves instead of getting 'down & dirty' with the weeds.

 However, on the plus side this has resulted in a rather good crop of blackberries. They are everywhere! so in the coming few weeks we are likely to see more than the odd recipe using blackberries appearing on this blog.



Yesterday I decided to make some sweet galettes with my picking and because I had some peaches that needed using up I made a peach one as well ...... both equally delicious...especially with custard!

Here's my recipe
Serves 8

pre-heat oven 190C/gas 5

For Sweet Pastry
8oz Plain flour
4oz Butter
3oz Sugar
1 egg

Approx 6oz Blackberries - picked over but not washed - makes for a soggy fruit!
or any other fruit you want to try

Sugar for sprinkling

3-4 tablespoons creme fraiche

First of all make up you pastry. Rub the butter into the flour, add your sugar and then the egg and maybe a spot of milk to form into a soft dough. Cover and pop in the fridge for about 10 minutes.


Roll your pastry out - any old shape and  then mark a circle on it using an appropriate size plate. I used a side plate because I decided to make two small galettes - 1 peach - 1 blackberry!


Pile on your fruit into the circle


Sprinkle on some sugar


And dollop on the creme fraiche

Now fold in the edges - start at one edge and literally roll your way around the galette folding the edges over to form a knobbly rustic rim. Paint the edge with milk or egg yolk to glaze.

Pop in the oven to cook for about 20 minutes until the pastry is cooked through & coloured.

These were delicious served with custard but cream or ice-cream will be just as good....

You could serve with all three......

                                                                  but the custard would melt the ice-cream.......hmmmmm.....
