American Blue Cheese Dressing


We wanted a salad with our meal last night but all the ingredients in our veg box were green & rather uninspiring so to liven it up a little I decided to make a blue cheese dressing - one of my favourites!

I don't know why I've named it 'American blue cheese' because usually you use Roquefort or Gorgonzola cheese which are French and Italian so I really don't know why I associate it with America and for some reason I always think of 'Happy Day's' with Richy & the 'Fonz' and American Dinners when I'm making it....

.....and anyway I used some rather ripe Stilton to make ours - which is British - so really I'm now completely confused!.....

But to get back on track -this is a really tasty robust salad dressing which we make fairly often. To make it slightly more healthy I use a mixture of yogurt and mayonnaise instead of the sour cream called for in other recipes.

These quantities will make enough for 4-6 servings

40g Blue Cheese - crumbled
1 tsp Sea salt crystals
1 tsp mustard powder
1 clove garlic - crushed
juice 1 lemon
2 tablespoons olive oil
4 tablespoons natural yogurt
2 tablespoons mayonnaise
1-2 spring onions - chopped


Pop your crushed garlic;mustard powder and sea salt into a sturdy bowl or pestle and crush together to form a paste......


Add your lemon juice.....


and combine it all together and then add your olive oil....


Next add your yogurt and mayonnaise - combine it all together to form a smooth creamy texture.


Add your spring onions.......


And then the blue cheese - any type will do but it should be a blue cheese with some guts/flavour to it - nothing subtle about this dressing ........


Fold the cheese in add some freshly ground black pepper and it's ready to go. You can make & serve this straight away or cover & pop in the fridge until needed. It will keep quite happily in the fridge for a few days.


We had it served just on lettuce the other night but you can serve it with any salad really - it's especially good with french fries dipped in it......

          but french fries are good with practically anything so if you want to go for it.....
