A Glut of Courgettes or Zucchini or whatever.......


It's been a really strange summer in my vegetable garden.......

The weeds have done marvels with some almost as tall as me towards the back of the veg beds. Most of my tomato plants, all of my pepper plants and 3 of my courgette (sub Zucchini if you prefer...) were all eaten in one night of mad passionate gluttony by the slugs & snails in my garden.

I was left with just a cucumber plant, three courgettes and a few tomato plants...

It put me off planting any salads...........

So I have been pleasantly surprised with how hard working my remaining veg plants have become and how many courgettes we are getting every few day. They are such troopers .... if only I could remember the name of the plants I could grow that variety again ..... but..... the slugs ate the packet!!

For next year I'm planning raised beds around my greenhouse so I can manage the slug problem a bit ( I mean a lot) better than I did this year. I think all the slugs within a 10 mile radios have moved into my garden but why don't they every eat the weeds?



We were getting a bit fed up with my usual courgette recipes so I decided to have a go at a casserole-come-bake type of dish...... here it is see what you think.

Recipe
serve 2 generously

2 large courgette - de-seeded and chopped into large chunks
1 large onion - peeled and chopped
1 large red pepper - de-seeded and chopped
2 or 3 Celery Sticks - cut into chunks
1 green chilli - just cut into rings
2 cloves garlic - crushed
1 tin chopped tomatoes - opened
Fresh herbs - bay, thyme, rosemary & parsley - chopped
1 ball mozzarella - torn
1 large handful of grated extra strong mature cheddar
smokey paprika - ready to be sprinkled

Pre-heat oven 160C /gas 4


Peel, chop and de-seed all your vegetables


Pop them into your lidded casserole pot


now grab your herbs and roughly chop them


and add to the pot


Pour your tomatoes over, add salt & pepper, pop on the lid and place in the oven for about 40 minutes to an hour.


Check you vegetables have started to soften and then pop on your cheeses and sprinkle with the paprika....


Pop back in the oven to brown for about 10 - 15 minutes


and serve with a green salad.

This was really yummy and can be prepared a head of time & just popped in the oven. Or you can part bake and just add the cheese when you re-heat.....
