Chicken Kebabs


I absolutely love chicken cooked on the barbecue - all those slightly burnt sticky tasty bits - yummy!

...... and if it's cooked on a skewer even better.

With summer evenings now here it means good times, good company and long evening barbecues.

So my challenge this year is to come up with as many different kebabs as I can because I LOVE cooking things on a skewer - shrimps, veggies, beef teriyaki, fruit - you name it I've cooked it. There's something very special about eating from a skewer and it's usually one of the most simple things to make. The only problem is you can grab & eat them too easily so, if your like me, you can end up eating a whole lot more than you planned!

Here's a very simple chicken kebab recipe. I usually have all the marinade ingredients as staples in the fridge and you probably do to! Therefore, it's an easy dish to make at a moments notice for when that barbecue bug grabs you!

There's no precise quantities for this so just go with the flow - I've tried to give some idea of the amounts I used this time....


First off make the marinade - in a bowl combine about 2 tablespoons of natural yogurt, some chopped parsley, a tablespoon of olive oil, 1 large tablespoon of balti paste (or some curry spice powder probably about 2 teaspoons) and the juice of 1 lemon.



Mix it all together and it looks like this - not very pleasing to the eye! but it will taste good I promise.....


Now, cut your chicken into long strips - I like to use thigh meat it's tastier but here I've used chicken breast because that's what was in the freezer!

Leave them to marinade for at least an hour.......

Whilst the chicken is marinading - pop your wooden skewers to soak in some water to stop them burning on the barbecue.


Thread your chicken onto the skewers....


And pop them on the barbecue.....


They will take about 15 to 20 minutes - keep turning them so they cook evenly


And that's it - you can serve these with rice for a more substantial meal or just pile them on a platter for everyone to help themselves....

We served ours with a lime mayonnaise -

Simply mix some shop bought mayonnaise with the zest & juice of a lime and seasoned with salt & pepper.....
