Cherry & Camembert Salad

Some times it's nice to really go to town on a salad.....

Andrew cooked some pork loin steaks for our evening meal last night and I was charged with doing all 'the stuff' to go with them!

So I decided a good tasty salad with a bit of pizazz was in order.....

Hence the invention of the Cherry & Camembert Salad.

Recipe

1 bag of mixed baby leaf salad (ours had beetroot strips in it as well - any leaf will do - it's up to you!)
1 fennel bulb - sliced
a handful of juicy cherries - halved & stoned
1 small Camembert cheese

Salad dressing
1 teaspoon Dijon mustard
2 tablespoons olive oil
1 tablespoon lemon juice
salt & pepper

First off place your salad leaves into a serving dish....

and add some slices of your fennel bulb

slice and tear your Camembert - add on top of your fennel

now pop on your cherries

                                      ............Yum .......it looks good!

Next you need to make up your salad dressing....

Place all the ingredients into a screw top jar

Like this....

Screw the top on & give it a good shake

So it looks like this.....

Just before serving pour it over your salads............

                                                                      so they look like this....................

I served ours in individual serving bowls because.............

                                                                       ...................well I wanted to!
