Mackerel & Orange Salad

What I really wanted today was a tasty healthy salad for lunch. After a weekend of eating out, chocolate cakes, puddings and other naughty delights my body craved healthiness (is that a word? well it is now!)

So this mackerel & orange salad was born & darn tasty it was too - We had seconds!!!

1 bag of mixed salad leaves
2 large smoked mackerel fillets
1 large orange
Half red onion
1 yellow pepper
2 celery sticks
Pine nuts

For the salad dressing
Olive Oil
1 small red chilli - diced into really  tiny cubes
1 clove garlic
Salt & pepper
a little sugar to taste if needed.

First grab you bowl and throw the salad leaves in. Then slice your pepper, onion & celery and arrange on top. This is a very visual dish & a treat for the eyes so its worth taking time to present it.

Now grab your mackerel & pull of the skin. Break the fish into bite size pieces and also arrange on the salad.

Peel your orange and cut out the segments - do this by cutting the top and bottom off your orange, place it on a chopping board & slice down to remove the skin & the inner pith. Pick up you peeled orange and place in you left hand over a bowl. Start rotating the orange and cut out each segment, letting them fall in to the bowl. You should be left with the orange skeleton in your left hand and a bowl of fruit & juice. Give the orange 'skeleton' a squeeze to remove all the juice & then discard.

Place the orange segments on the salad and save the juice.

Cut your Feta in to cubes & guess what.....


Place on your salad!!

Now lets make the dressing. Grab a clean jam jar and add your orange juice, 2 tablespoons olive oil, chilli, crushed garlic, salt & pepper - pop the lid on and shake - the jar not you!

Taste & add more seasoning or a little sugar if the orange isn't sweet enough.

Pour over your salad & sprinkle on the pine nuts

and serve.

We had ours with a french stick & butter.
