TV Dinner for One


Last week Andrew went out for a curry with his mates from University.

Normally when left on my own I don't worry much about cooking dinner but tonight I decided to break-free from the computer and make myself a 'lap-top' meal and catch up on some TV.........a revisit of the first series of banshee! I do like a bit of badass crime fighting.....

I had a quick rifle through the freezer for some ideas and came up with a large chicken breast, so decided on some chilli chicken kebabs with salad & cheese nachos

Recipe for one

1 Chicken breast
2 tablespoons hot sweet chilli sauce
Zest & juice of one large lime (or 2 small)
Salt & Pepper
Extra slices of fresh red chilli - if feeling in need of extra spice in your life!

1 small bag Nachos
Grated mature cheddar cheese
A small handful fresh chive - chopped

A sour cream & chive dip - 3 tablespoons fresh sour cream mixed with a handful of chopped fresh chives, add salt & pepper along with the juice of half a lemon if you fancy.

Bag of rocket & some sunblush tomatoes to serve.

Cut your chicken breast into large cubes and place in a mixing bowl. Add your chilli sauce, lime zest & juice and season. Add extra fresh chilli if using. Give it all a good stir & place in the fridge to marinade for about an hour.
Remove from fridge and thread onto kebabs (if using) and place under a medium hot grill. Cook for about 10 minutes on both sides or until the chicken is cooked through & started to slightly catch around the edges.

Remove from the grill & set aside.



Next pop the nachos into a heat proof dish and sprinkle the cheese & chives on top place under the grill & keep an eye on it whilst the cheese melts - you don't want to burn the nachos so move to a lower shelf if they start to catch.


To serve place a large handful of rocket on your serving dish and drizzle some olive oil over, drop on some sunblush tomatoes and then place the chicken on top.

Place all on a tray, open the wine, turn the telly on, sit back & eat.




It's fine to miss your hubby but look on the brightside..........

Whilst he's out you get to eat like this, drink a glass (or 2) of wine and watch your fav TV without comment
