Oven Baked Mushroom Risotto

Did you hear the one about the mushroom that got invited to all the parties? it was because he was a fun guy! (fungi get it!!!)

So sorry I have no explanation for why I decided to open this post with such an appalling joke!

After that you have probably guessed this dish is all about the mushrooms.......

Here is my oven baked mushroom risotto. It quick to prepare and once it's popped into the oven you don't need to do anything else so it's great for a meal to cook on a busy evening.

Serves 4

125g Closed cup mushrooms or chestnut mushrooms
100g Risotto rice
3 Garlic cloves - left whole with skins on
1 Large onion
Olive Oil
Half a pint chicken stock
1 Tsp dried thyme
Some fresh thyme on stalks (optional - looks pretty!)
Salt & Pepper
1tsp chilli flakes (optional - if feeling in need of a little heat & spice in your life)

To serve
black pudding - 2-3 rings per person (optional )
Salad leaves
Parmesan shavings

Pre-heat your oven to 150C/Gas 2

Ok here we go.....

Get your large covered casserole pot - pour a slick of olive oil in the bottom and throw in your onions. Make sure you keep the root on the onion when slicing so the slices stay intact.

Now slice your mushrooms and add to the pot. I have tried loads of different mushrooms in this dish but have found that I prefer the closed cup or the chestnut mushroom. But all types will work just fine so choose your favourite.

Add your rice...........

And then your herbs & spices......

Pour in your stock and add your cloves of garlic

Now fold it all together so everything gets coated with the liquid and the rice is all covered. Thinking about it perhaps I should of added the rice before the mushrooms it would have made the last bit easier!

Cover your dish and pop in the oven for about 30-40 mins. I always check after half an hour and the put it back in if it needs longer - it's a very forgiving dish so it wont matter if you slightly over cook it.

If you are going to serve yours with the black pudding - place the rings on an oiled baking tray, brush each ring with oil and place in the oven about 10mins before serving.

Remove from the oven.

Place on hot plates, add a handful of fresh salad leaves; a couple of black pudding rings; some parmesan shavings over the top & serve straight away.

Now for a really good joke that always cracks me up.....

There are two ants sat on top of a cereal packet and one suddenly jumps up and starts running back and forth.
 'What are you doing?' asks the other ant
 'Can't you read' replies the first,  'it says tear along the dotted line'
