Croissant French Toast


Bank Holiday Weekends should be all about good food, family,friends & relaxing.

 However, this year Andrew has a lot of work on for the University so relaxing
 is out of the question, all our Family seem to have gone away for the holidays
 and whilst we have been able to visit with some friends it's only been brief visits!

 This anti-social holiday has not stopped me from cooking good things- well we do have to eat right!

So here's my celebration breakfast

We had some Croissants in the freezer (leftovers from I don't know when) some were
 butter Croissants and a couple other were almond - they're just your ordinary supermarket 
ones picked up from Le Tesco or should that be La? Anyway, these are perfect for french toast.
 Fresh Croissants are too moist so day old or froze are just right.


Recipe
Serves 4

4 Whole Croissant (defrosted if frozen)
3 eggs
100ml Milk ( I prefer semi-skimmed)
1 Tablespoon Sugar
1 Teaspoon Vanilla Essence

Butter for Frying

Maple Syrup
Strawberries
Cream Cheese or Cream


Split your Croissants open - if large cut into quarters it makes it easier to turn them in the pan.

Crack the eggs into a large bowl & break up with a fork. Add the milk, sugar and vanilla
whisk together to make a thin batter then dunk each croissant so they are coated all over. 
Set aside on a plate

Get a large non stick pan and set over a low heat, melt a small lump of butter and when it
 has started to bubbling slightly place place a few pieces of croissant to the pan -don't add too many 
at once so that it's to difficult for you to turn them.  know you need to tend them increasing the
 heat to a medium but be ready to lower if needed - you want to cook the batter through but not
 burn the outside move the croissants around the pan & babysit them! 

When cooked on both side place in a warm oven until you have cooked the whole batch.

To serve place on warm plated, pour over the maple syrup, throw on some sliced strawbs and a good dollop of cream cheese and enjoy!


This morning I used up the left over batter of some Hot Cross Buns and served with bacon - Very yummy
