Hey it's friday

Friday nights are home date nights in our house.
 We both have very hectic weeks so we make sure that on Friday evenings we do something different form a usual week night. 

Usually we cook together & then catch up on a film or something on TV is a good wind down for the weekend.

Tonight is Pizza & beer night but it home made Pizza & a locally brewed beer so it's a bit more special than it sounds.


(this will be enough for 2 medium pizzas)
for the base 
200g  strong white flour
100g   plain white flour
1 tsp salt
large splash olive oil
1 tsp dried yeast

Put flour yeast & salt into a large bowl. Make a well, pour in about 200ml warm water
and olive oil. Bring this all together with a wooden spoon until you have a soft,fairly wet dough.
Turn out onto a floured surface & knead until smooth (usually about 5 Min's) Cover with a tea towel and set aside.

for the topping
1 tin chopped tomatoes

Be brave for this bit - tip the tin of tomatoes into a nonstick pan and place over a medium to high heat shake but do not stir. Leave on heat until all the moisture has evaporated & the colour has changed to a darker red.this should be a paste like consistency.

Pre heat your oven to 240C/Fan 220C/Gas 8.

Next roll out your dough to form two rounds on a floured surface. We usually make our pizzas about 25cm across. Lift & place on floured baking sheets. Divide the tomato paste between the two bases and spread with the back of the spoon. 

olives (black,stoned & ripped)
2 balls mozzarella (drained & dried)
cherry tomatoes
 basil leaves
Scatter over the remaining toppings, ripping not slicing the mozzarella balls, add seasoning if you wish. Bake for 8-10 Min's then slide off the baking tray back into the oven for a further 2 Min's to crisp up the base. Serve with a mixture of pesto & olive oil drizzle on top.
